Please Help me....my marine tank ammonia is off the charts

Hi, I have decided to begin a new journey into the world of marine tanks.
I purchased a
- 75 gallon tank
- 75 pounds of aragonite sand
- 40 pounds of dry rock
- Instant ocean salt
- Fluval FX6 (i purchased this before i decided to go marine)
- 300 watt water heater

Unfortunately i was given bad advice at my LFS and they did not mention anything about rodi, live rocks, live sand or even the process of cycling a tank. I actually blame myself a bit here as i should have done research instead of jumping the gun but i was about to go tropical until i saw all those beauties in the saltwater side!!
anyway.....
The guy basically told me "people think this is a tough hobby but it's really simple, you fill up the tank, throw in the sand, throw in the salt, place the rocks, and wait a week before you purchase a fish.....then in 2 weeks you can add another fish and so on...."

So i took this guys advice....everything was great....the fish were thriving for a good month...then i decide to do a little reading and now im getting nervous....the talks of using tap vs rodi, starting a tank with live rocks, and especially letting the tank cycle before throwing fish in there. i was now in a state of panic as i did not want my fish to suffer. so i immediately purchased the API Marine tank test and it appears that the tank has not even started it's cycle yet. so this means the fish haven't even experienced the sufferment yet so I go ahead and purchase Ammolock and Stresszyme+ ....i follow the directions and begin dosing my tank, i woke up the next day and the fish were doing great. waited another day and dosed again....the following morning both my fish were dead and 1 of my shrimp died. I was furious and hurt at the same time. I believe it was the chemicals that killed them, my fish were doing fantastic until i added those 2 liquids.

fast forward a month (2 months having the tank up and running)
I am fishless and everytime i look at my tank i feel hurt.
i will never jump into anything without doing my own research!

Here are my latest results
i ran a test and my ammonia is 8.0+ (its darker than the color on the chart) PH is at 8, Nitrite = 2.0, Nitrate = 40, Salinity is 1.025 temp is always at 80-82

Why is this taking me so long to cycle? what should i do with such high ammonia levels? what does the results of the nitrate and nitrate tell you?
should i do a water change? should i start over with live rocks?

i know patience is the key to this hobby and i am willing to wait it out if i must but i just need a little guidance and support at this point. please be easy on me for the loss of my fish....i'm still hurt about it. :(
