Salt

I have been meaning to ask given that I have fresh and salt tanks in the house. In a fresh tank in the past I have added aquarium salt purchased at the chain stores. They are clear crystals etc.

What is the difference between that and stuff like Instant Ocean etc ?? Can IO be substituted ?
